When it comes to zucchinis, I am spoilt for choice! I get access to (in my opinion) the best home grown zucchinis straight from my in-laws’ garden. And I’m always thankful for that.

Recently, we managed to get such big zucchinis, one of them was as large as Mochi (my fluffy cat)! I was so amused by it, that I had to make these appetizer bites straight away.

Crispy Parmesan Zucchini Fries Recipe

As I’m growing older, I’m trying to incorporate more vegetables into my diet, even when snacking. These zucchini fries with parmesan cheese ticks that box nicely.

And to keep these delicious morsels within the healthier scope, I make the fries by chucking them into the air fryer. Which also makes the entire process much easier!

Healthy French Fries

This is an eggless zucchini fries recipe, made with seasonings like garlic powder, onion powder, and cajun seasoning. The crispy coating of the fries come from the use of Panko crumbs and also grated parmesan.

Zucchini Fries Dipping Sauce

Serve these air fried bites with dipping sauces of your choice! Some options include spicy mayo, ketchup, chili sauce, hummus, or even guacamole. You can also try it out with the special sauce from my In-N-Out Copycat Animal Style Fries recipe!

Ingredients You’ll Need

  • Large zucchini
  • Neutral oil
  • Onion powder
  • Garlic powder
  • Cajun seasoning
  • Salt
  • Grated parmesan: To keep it vegan, swap to a vegan parmesan cheese substitute.
  • Panko Crumbs

How To Make Air Fried Eggless Parmesan Zucchini Fries

  1. Rinse and pat dry the zucchini. Cut into the shape of fries. Set aside.
  2. In a large bowl, add neutral oil, onion powder, garlic powder, cajun seasoning and salt. Mix well. Add the sliced zucchini into the bowl and coat with the seasoned oil. Once it’s well coated, add parmesan and panko crumbs on top. Toss or mix the fries until well coated. Add a drizzle of oil if too dry and if needed.
  3. Air fry (or pan fry– see notes) the zucchini fries at 400 F for 6-8 minutes. Serve with your choice of sauce and add more parmesan on top. Best served while hot. Enjoy!

How to get crispy zucchini fries?

Make sure to pat the zucchini fries dry before coating them in the seasoned oil, parmesan cheese, and Panko crumbs. This will help them get a crispy crust.

How to prevent zucchini fries from being soggy?

You want to make sure each zucchini fries has skin. If you’re only using the flesh part of the zucchini, the fries will be too soggy.

Really crispy zucchini fries recipe

This zucchini fries is only lightly coated in panko and has no batter so it will only be lightly crispy. If you prefer it really crispy, you can follow this recipe. Instead of slicing it into coins, you can cut it into the shape of fries.

Can I pan fry parmesan zucchini fries?

Yes, you can! Coat the bottom of a frying pan with oil and heat it up over medium heat. Once it’s hot enough, add the zucchini fries and cook for 2-3 minutes on each side.

Can I make air fry zucchini fries vegan?

Yes! You can make it vegan by swapping to a vegan parmesan cheese substitute.

Ingredients
  

  • 1/2 large zucchini
  • 3 tbsp neutral oil
  • 1 tsp onion powder
  • 1 tsp garlic powder
  • 1 tsp cajun seasoning
  • 1/4 tsp salt
  • 1/4 cup grated parmesan
  • 1/4 cup Panko Crumbs

Instructions

We got pizza from one of the oldest pizzerias in Naples, Italy and it didn’t disappoint. We got there right when it opened and there was already a line. We ended up getting the pizzas to-go and ate it on the hood of our rental car. Each box of pizza was only €5 and we got every item on the menu (it was only a 4 item menu anyway 😂). While waiting in line, the smell of the wood fired pizza was sooo good we were so hungry by the time we got our orders. We got pizzas from across the street too just to compare. There was no line at that restaurant and you could easily get a table. It was a little bit more expensive per pizza but still affordable. Both pizzas were delicious! Still dreaming about it till this day 🥲
Fun fact: Eat, Pray, Love was filmed at Pizzeria Da Michele!

Ending my Ramadan series with one of the best dishes. This is a dish that’s traditionally served during Eid/Raya in Malaysia, Indonesia and Singapore. Every family usually has their own version of this. It’s usually served with nasi impit (cubed rice), lemang or pulut kuning (turmeric glutinous rice) but also just as good with white rice. 
Making this is a truly a labor of love especially when you make big batches. It can take hours! Families will cook this the night before Eid so the dish will be ready in time for the big celebration. The whole house will usually smell like rendang when this is made and honestly, one of the best smells that reminds me of such great and fond memories. 
This month just flew by— thanks so much for tuning in. I’ll be back with my usual twice a week recipes starting next week 💛
