Easy Thai fried chicken wings with dipping sauce and sliced limes

For Day 2 of my Ramadan 2026 Series, we have the simple Thai fried chicken wings with a spicy and tangy dipping sauce.

Homemade Thai Chicken

Do you have a go-to order when you go to Thai restaurants? Perhaps the fragrant Thai Basil Fried Rice as a main, the crispy Thai Style Omelette as a side, or the indulgent Mango Sticky Rice for dessert. One of the things that I would always get is the chicken wings.

And so, I decided to recreate an easy at-home version of this dish! For an added touch of flavor and texture, we’re pairing it up with the delicious nam jim jaew dipping sauce.

Easy Thai Chicken Wings

These crispy Thai chicken wings are light and savory, made with a 5-ingredient marinade of fish sauce, sugar, vinegar, rice flour and cornstarch.

This recipe is more simplified as compared to the traditional Thai style fried chicken, which can include ingredients such as garlic, cilantro (coriander), or lemongrass.

What Is Nam Jim Jaew?

Nam Jim Jaew is a classic Northern Thai dipping sauce that’s spicy, tangy, and slightly sweet. It’s typically served together with meats and steaks, with one of the most popular ones being the Crying Tiger Beef Steak (Sua Rong Hai).

This aromatic and umami-filled sauce contains ingredients like fish sauce, cilantro, tamarind concentrate and lime juice, which complements the crispy wings beautifully.

It also has the signature ingredient–toasted rice powder (Khao Khua)–which brings a slightly smoky and nutty depth to the sauce.

Ingredients You’ll Need

Chicken Wings

  • Chicken wings
  • Fish sauce: Adds saltiness and umami to the chicken.
  • Sugar: Rounds out the flavors of the marinade.
  • Vinegar: Helps to give a hint of acidity.
  • Rice flour + Cornstarch: Rice flour coating makes the chicken crunchy, while the cornstarch helps keep it light and airy.

Nam Jim Jaew (Sauce)

  • Aromatics: Onions, cilantro, and garlic.
  • Chili flakes: Add based on your spice level preference.
  • Fish sauce
  • Water
  • Tamarind concentrate: Adds a deep sour flavor with hints of tang, which balances the saltiness of the fish sauce and spiciness of the chili flakes.
  • Lime juice: Gives a touch of acidity and sourness that’s more refreshing.
  • Sugar
  • Toasted rice powder: Gives a hint of smoky and nutty aroma, and slightly thickens the sauce.

How To Make Easy Crispy Thai Chicken Wings With Nam Jim Jaew Sauce

Prepped chicken wings in metal bowl

1. Add all the ingredients for the chicken in a large bowl or ziploc bag. Mix well and let it marinate for at least 30 minutes.

2. Add all the ingredients for the sauce in a bowl and mix well. Adjust to taste. Keep it in the fridge until ready to serve.

Frying Thai chicken wings in oil

3. Over medium low heat, heat up oil for frying. Once hot enough, add the marinated wings and fry it for 8-12 minutes or until fully cooked. Fry in batches.

4. Once cooked, serve with sauce. Best served hot. Enjoy!

Notes For Thai Fried Chicken

  • Make your own toasted rice powder: If you can’t find toasted rice powder, make it yourself by toasting rice in a pan over medium heat until it turns golden brown. Swirl it around the pan or stir for even toasting. Once done, grind into a powder.
  • Can I air fry or bake Thai chicken wings? It’s best to deep fry or shallow fry Thai chicken wings. The wet marinade makes it not so suitable for air frying or baking as the texture will differ.
