Happy holidays everyone! I hope you’ve all been having an enjoyable last few days of 2022. To wrap up the year, the winter season announced its arrival loud and clear (at least in Chicago!).

For me — and I’m sure this goes for many of you as well — freezing cold temperatures with a frosty bite always gives rise to an intense craving for a delicious bowl of hot noodle soup. A hearty, feel-good meal that can warm you up at any time of day!

So because of that, I’m always trying to come up with new easy recipes that I can add into my noodle soup rotations. Emphasize on the easy.

Easy Hearty Noodle Soup

This scrumptious recipe takes only 15 minutes to make! Despite being simple and quick to put together, it doesn’t take away from how tasty the dish is. And most of the ingredients are pantry staples, so you can whip it up at any given moment.

Ingredients

  • Noodles

Soup base

  • Garlic
  • Green onions
  • Sugar
  • Neutral oil
  • Light soy sauce
  • Oyster sauce
  • Tahini/peanut butter (optional but highly recommended)
  • Chicken bouillon
  • Chili oil: I used my homemade chili oil. As for a store bought option, I recommend the one by Lao Gan Ma.
  • Milk 

Garnishing

  • Egg
  • Green onions
  • Chili oil (optional)

Instructions

  1. Boil noodles and drain per package instructions.
  2. Add green onions, garlic and sugar in a bowl. Heat up neutral oil until it’s really hot/smoking then immediately pour into the bowl.
  3. Add the rest of the ingredients, stir then pour in hot milk. Stir until everything is well combined.
  4. Add noodles and garnish with chili oil, eggs and green onions. Enjoy!

Notes for Easy Hearty Noodle Soup

  • Choice of toppings: Garnish with your choice of toppings. Other suggested toppings: Shredded chicken, fish cakes, fried onions and garlic.
  • Type of milk: I used regular lactose free milk. You can substitute it with any plant based or regular milk but I recommend using the unsweetened versions. Adjust the seasonings to taste/accordingly.

Ingredients
  

  • 1 serving of noodles

Soup base

  • 1/2 tbsp minced garlic
  • 1 tbsp diced green onions
  • 1/2 tsp sugar
  • 1.5 tbsp neutral oil
  • 2 tbsp light soy sauce
  • 1 tbsp oyster sauce
  • 1 tbsp tahini/peanut butter optional but highly recommended
  • 1 tsp chicken bouillon
  • 1 tsp chili oil
  • 1 cup milk see notes

Garnishing

  • 1 egg
  • green onions
  • chili oil optional

We got pizza from one of the oldest pizzerias in Naples, Italy and it didn’t disappoint. We got there right when it opened and there was already a line. We ended up getting the pizzas to-go and ate it on the hood of our rental car. Each box of pizza was only €5 and we got every item on the menu (it was only a 4 item menu anyway 😂). While waiting in line, the smell of the wood fired pizza was sooo good we were so hungry by the time we got our orders. We got pizzas from across the street too just to compare. There was no line at that restaurant and you could easily get a table. It was a little bit more expensive per pizza but still affordable. Both pizzas were delicious! Still dreaming about it till this day 🥲
Fun fact: Eat, Pray, Love was filmed at Pizzeria Da Michele!

This is definitely not an authentic recipe but a simplified version that my mother-in-law makes often and now a recipe that I make quite a lot for a quick breakfast using ingredients easily accessible to us here. It definitely hits the spot! Feel free to add protein of your choice to this dish or just add a fried egg on top!

Ending my Ramadan series with one of the best dishes. This is a dish that’s traditionally served during Eid/Raya in Malaysia, Indonesia and Singapore. Every family usually has their own version of this. It’s usually served with nasi impit (cubed rice), lemang or pulut kuning (turmeric glutinous rice) but also just as good with white rice. 
Making this is a truly a labor of love especially when you make big batches. It can take hours! Families will cook this the night before Eid so the dish will be ready in time for the big celebration. The whole house will usually smell like rendang when this is made and honestly, one of the best smells that reminds me of such great and fond memories. 
This month just flew by— thanks so much for tuning in. I’ll be back with my usual twice a week recipes starting next week 💛
