Crispy fried oyster mushroom bites

If you’re on the lookout for the next snack to make for those times when you’re just chilling in front of the TV and binging shows, have I got the perfect one for you! These crispy fried oyster mushroom bites have a delicious crunchy coating on the outside with a tender and meaty center.

It’s becoming a favorite in my household, especially with how quickly I can make up a new batch.

And they’re also vegan-friendly! The only thing to note is that I use regular mayonnaise as part of my sauce, but substitute that out for vegan mayonnaise and all is well.

Crispy Mushroom Bites

These savory appetizers are essentially sliced oyster mushrooms that’s dipped into seasoned batter, then coated with panko crumbs before frying until it turns into a ravishing golden brown.

Serve it with a sauce of your choice, or try out this simple one that’s a combo of few ingredients: mayonnaise/vegan mayonnaise, ketchup, rice vinegar, sweet relish, and sugar. (Psst, it’s the same special sauce that I use in my In-N-Out Animal Fries Copycat recipe!)

Ingredients You’ll Need

  • King oyster mushrooms
  • Panko crumbs

Batter

  • Flour
  • Water
  • Salt
  • Pepper
  • Cumin
  • Paprika
  • Chili powder
  • Sugar
  • Garlic powder

Sauce

  • Mayonnaise/vegan mayonnaise
  • Ketchup
  • Rice vinegar
  • Sweet relish
  • Sugar

how to make vegan-friendly fried oyster mushroom bites

  1. Slice the rinsed mushrooms to equal thickness.
  2. Make the batter by combining all the dry ingredients in a bowl except for the panko crumbs.
  3. Add water and mix. You want a consistency that’s not too thick and not too watery (see notes).
  4. Add mushrooms in the wet batter and coat it, then coat with panko crumbs.
  5. Heat up oil over medium heat in a frying pan and shallow fry the mushrooms for 1-3 minutes on each side or until mushrooms are golden brown (see notes).
  6. Make the sauce by mixing all the ingredients.
  7. Serve while hot with this sauce or sauce of your choice and enjoy!

Notes for Fried Oyster Mushroom Bites

Batter consistency

The consistency of the batter should be in between a pasty and watery consistency. Adjust with more flour or more water to reach that consistency, 1/2 tbsp at a time.

Can you deep fry or air fry the mushroom bites?

Yes, definitely! You can opt to deep fry, or air fry the fried oyster mushroom bites at 375°F for 16-20 minutes.

Are the mushroom bites vegan-friendly?

Yes, this recipe is vegan friendly! Just swap the mayonnaise for the sauce with vegan mayonnaise or serve with your sauce of choice.

Ingredients
  

  • 3 king oyster mushrooms
  • Panko crumbs

Batter

  • 3/4 cup flour
  • 1/2 cup and 2 tbsp water
  • 3/4 tsp salt
  • 1/4 tsp pepper
  • 1/2 tsp cumin
  • 1/2 tsp paprika
  • 1/2 tsp chili powder
  • 3/4 tsp sugar
  • 1 tsp garlic powder

Sauce

  • 1/2 cup mayonnaise/vegan mayonnaise
  • 2 tbsp ketchup
  • 1/2 tbsp rice vinegar
  • 2 tbsp sweet relish
  • 1 tbsp sugar

Instructions

    Absolutely loved this recipe. I didn’t have king oyster mushrooms, but I did try it with baby Bella mushrooms and it was definitely delicious!

    Definitely a great recipe! These made my dinner last night. Thanks for sharing. I used king Oyster mushrooms and they came out perfect. Next time I will pair with a homemade marinara!

We got pizza from one of the oldest pizzerias in Naples, Italy and it didn’t disappoint. We got there right when it opened and there was already a line. We ended up getting the pizzas to-go and ate it on the hood of our rental car. Each box of pizza was only €5 and we got every item on the menu (it was only a 4 item menu anyway 😂). While waiting in line, the smell of the wood fired pizza was sooo good we were so hungry by the time we got our orders. We got pizzas from across the street too just to compare. There was no line at that restaurant and you could easily get a table. It was a little bit more expensive per pizza but still affordable. Both pizzas were delicious! Still dreaming about it till this day 🥲
Fun fact: Eat, Pray, Love was filmed at Pizzeria Da Michele!

Ending my Ramadan series with one of the best dishes. This is a dish that’s traditionally served during Eid/Raya in Malaysia, Indonesia and Singapore. Every family usually has their own version of this. It’s usually served with nasi impit (cubed rice), lemang or pulut kuning (turmeric glutinous rice) but also just as good with white rice. 
Making this is a truly a labor of love especially when you make big batches. It can take hours! Families will cook this the night before Eid so the dish will be ready in time for the big celebration. The whole house will usually smell like rendang when this is made and honestly, one of the best smells that reminds me of such great and fond memories. 
This month just flew by— thanks so much for tuning in. I’ll be back with my usual twice a week recipes starting next week 💛
