The holiday season is fast approaching, starting off with Thanksgiving just next week! And these roasted potatoes with garlic butter make for a great option as a potential side dish. It requires only 15 minutes of prep time, then the rest is just of boiling the potatoes and baking it in the oven.

Crispy Garlic Butter Potatoes
These crispy garlic butter potatoes are first boiled in water, then tossed in a simple seasoning mix. After that, the potatoes are baked until golden perfection, before being drizzled with a rich and aromatic garlic butter. And voila! A delicious appetizer.
The reason why we boil the potatoes first is to ensure that it has a soft, fluffy and tender interior. And once we roast them, we’re able to get that perfectly crispy texture on the outside.
It’s also great to turn the potatoes in the middle of baking to make certain that all sides are being roasted properly, resulting in a crispier exterior.

Ingredients You’ll Need

- Mixed baby potatoes: You can use other potatoes as well like russet potatoes or Yukon gold potatoes. But since I’m using baby potatoes, I only need to slice them in half.
- Neutral oil
- Salt
- Onion powder
- Cajun seasoning
Garlic Butter
- Butter
- Olive oil
- Garlic
- Paprika
- Pepper
- Salt
- Sugar

how to make easy garlic butter roasted potatoes
- Preheat oven to 400 F and bring a pot of water to a boil. In the meantime, cut the rinsed and cleaned baby potatoes into half or quarters if they’re bigger.
- Once the water starts boiling, add the potatoes and let it cook until fork tender (10-15 minutes). Once it’s done, drain and shake off excess water. Return the potatoes to the pot.
- To the pot, add neutral oil, salt, onion powder and cajun seasoning. Gently toss the potatoes to coat with the oil and seasoning.
- To a baking tray, add a bit of oil to coat the surface. Transfer the potatoes to the tray and make sure the potatoes are facing down.
- Place the potatoes in the preheated oven for 25 minutes. Remove then toss/turn the potatoes and place back in the oven for another 15 minutes or until golden brown and crispy.
Garlic Butter
- While the potatoes are cooking, melt the butter and oil in a pan over medium heat.
- Add the minced garlic and let it cook for 3-4 minutes– stirring often and careful not to burn the garlic. You want to cook it until right before it turns golden brown.
- Turn heat off and add the seasonings immediately and stir until well combined.
To serve
- You can either toss the roasted potatoes in the garlic butter and serve or serve the roasted potatoes and drizzle the garlic butter on top. Garnish with dried or fresh minced parsley. Enjoy!

Notes For Crispy Garlic Butter Roasted Potatoes
Potato options: You can also use russet or Yukon gold potatoes. Just boil it for longer.
Garlic amount: Adjust the amount of garlic to your preference.
Storage: Store in an airtight container in the fridge for up to 3 days.
