Welcome back to my Ramadan 2023 Series! We’re already at the halfway point of this month, and we’ve gone through quite a few recipes!

Usually around this time of the Ramadan month, my desire to cook a full meal dwindles a bit, and all I want is to take it easy. So today’s recipe is the perfect one to combat that mood, by levelling up your instant ramen game. For Day 14 of this series, we have Soondubu Ramyeon.

what is soondubu ramyeon?

Soondubu ramyeon (or sundubu ramen) was a viral instant noodle recipe that was all over the Korean social media spaces a couple of years ago. It combines the tastes of instant noodles with the comforting flavors of sundubu jjigae (a Korean spicy soft tofu stew).

In the viral recipe, the Korean noodle Yeol Ramen by Ottogi was used, because the spiciness of the seasoning is close to the spicy taste of sundubu jjigae. However, you can swap that with any spicy soupy ramen of your choice. My personal favorite for these type of recipes is Shin Ramyun. But you can honestly just use any soupy ramen that you desire, even the non spicy ones!

My Soondubu Ramyeon Version

For my version, we’ll be incorporating onions, green onions, sesame oil, and oyster sauce to the instant ramen for a more flavorful broth. I also added some heavy cream for a more creamier broth texture, but this is definitely optional. Finally, you just need to add in some soft tofu and an egg, and you’re done!

ingredients you’ll need

  • Soup instant noodle: I used Shin Ramyun
  • Onion
  • Green onion: White and greens separated
  • Gochugaru: Add only if you want it to be more spicy
  • Sesame oil (optional)
  • Water 
  • Oyster sauce
  • Heavy cream (optional)
  • Soondubu (soft tofu)
  • Egg

how to make sundubu ramen (instant Ramen With Soft Tofu)

  1. In a pot over medium heat, add 1.5 tbsp of oil and add onions and the white part of the green onion. Sauté for 1-2 minutes before adding the instant noodle seasoning powder and sesame oil. Sauté for 1 more minute before pouring in water.
  2. Add oyster sauce and stir. Cover with a lid and bring to a boil. Once boiling, add the noodles and dried vegetables.
  3. Let the noodles cook per package instructions and once cooked, add heavy cream and stir.
  4. Add soondubu (soft tofu) and gently break it apart with a spoon. Crack an egg and cover with a lid until the eggs are cooked to your desired doneness. Garnish with green onions and enjoy!

  • If you want it extra spicy, add more gochugaru.

Ingredients
  

  • 1 packet soup instant noodle I used Shin Ramyun
  • 1/4 onion minced
  • 1 diced green onion white and greens separated
  • 1/2 tbsp gochugaru add only if you want it to be more spicy
  • 1 tsp sesame oil optional
  • water amount per package instructions
  • 1 tbsp oyster sauce
  • 1 tbsp heavy cream optional
  • 5.5 oz soondubu (soft tofu) or half a packet
  • 1 egg

Instructions

  • Add soondubu (soft tofu) and gently break it apart with a spoon. Crack an egg and cover with a lid until the eggs are cooked to your desired doneness. Garnish with green onions and enjoy!

We got pizza from one of the oldest pizzerias in Naples, Italy and it didn’t disappoint. We got there right when it opened and there was already a line. We ended up getting the pizzas to-go and ate it on the hood of our rental car. Each box of pizza was only €5 and we got every item on the menu (it was only a 4 item menu anyway 😂). While waiting in line, the smell of the wood fired pizza was sooo good we were so hungry by the time we got our orders. We got pizzas from across the street too just to compare. There was no line at that restaurant and you could easily get a table. It was a little bit more expensive per pizza but still affordable. Both pizzas were delicious! Still dreaming about it till this day 🥲
Fun fact: Eat, Pray, Love was filmed at Pizzeria Da Michele!

Ending my Ramadan series with one of the best dishes. This is a dish that’s traditionally served during Eid/Raya in Malaysia, Indonesia and Singapore. Every family usually has their own version of this. It’s usually served with nasi impit (cubed rice), lemang or pulut kuning (turmeric glutinous rice) but also just as good with white rice. 
Making this is a truly a labor of love especially when you make big batches. It can take hours! Families will cook this the night before Eid so the dish will be ready in time for the big celebration. The whole house will usually smell like rendang when this is made and honestly, one of the best smells that reminds me of such great and fond memories. 
This month just flew by— thanks so much for tuning in. I’ll be back with my usual twice a week recipes starting next week 💛
