What Is Temaki?
Temaki is a hand roll sushi made by rolling up sushi rice, vegetables, and raw fish or shellfish in a sheet of nori (aka roasted seaweed). It’s an easier version of making your own sushi at home without the need of using a bamboo mat, and the process is very forgiving!
It makes for a great home party or gathering dish, as you can prepare the ingredients needed for your guests and have them pick and choose their fillings as they please. Just like a taco bar! Or in this case, a temaki sushi bar.
Spicy Tuna Hand Roll Recipe
For this recipe, we’re going down the non-traditional route by using canned tuna for the protein. It’s mixed together with some flavorful spicy mayo sauce, before assembled with seasoned sushi rice, sliced avocado, and cucumber, then rolled into a cone shape.
It’s typically served with a side of soy sauce, wasabi, and pickled ginger.

Notes for Spicy Tuna Hand Roll (Temaki)
- Filling substitutions: Feel free to use fresh sushi grade tuna or salmon instead.
- Furikake and hot oil: I like seasoning my rice with furikake and hot oil for extra flavor and a bit of heat. This is optional.
