Easy Tasty Scallion Oil Noodles

This classic humble Shanghai dish is simple but so tasty! It can be eaten for breakfast, lunch or dinner-- even as a snack if you want to! Add a fried egg and dare I say it, the perfect noodle dish.

Ingredients

  • 1/2 cup neutral oil
  • 2 tbsp sugar
  • 3 tbsp dark soy sauce
  • 4 tbsp light soy sauce
  • 5 scallions (green onions)
  • 3 garlic sliced
  • 2 servings dried thin wheat noodles

Instructions

  • Cut scallions into long sections and slice garlic.
  • In a pot/pan, add neutral oil, scallions and garlic.
  • Cook over medium low heat for 20-25 minutes or until the scallion browns. Stir occasionally.
  • Meanwhile, cook noodles according to instructions and drain. Let it run under tap water for 30 seconds.
  • Once the time is up, add the light soy sauce, dark soy sauce and sugar. Stir and turn off heat.
  • In a bowl, add the noodles and pour the scallion oil all over the noodles.
  • Stir well to evenly coat the noodles. Optional: serve with a fried egg. Enjoy!

Notes

*Adding garlic is optional. Traditionally, garlic is not used but I like a little bit of garlic flavor.
*Very important to cook on medium low or low heat especially if you use garlic.
