Wild Mushroom Cheese Pizza with Truffle Oil

An easy and delicious Wild Mushroom Cheese Pizza with Truffle Oil that's perfect for weeknight dinners or even as a date night option! You can also skip the truffle oil if you're not a fan, and it'll be just as good.

Ingredients

  • small pizza crust homemade/store bought
  • 1 cup shiitake mushrooms sliced
  • 1 cup oyster mushrooms sliced
  • 4 cloves garlic sliced/minced
  • 1/4 tsp salt
  • 1/4 tsp pepper
  • 1/2 tsp thyme
  • 3/4 cup shredded taleggio see notes
  • 3/4 cup shredded parmesan see notes
  • 3/4 cup shredded mozzarella
  • truffle oil
  • chili flakes

Roasted Garlic Sauce

  • 1 roasted head of garlic see notes
  • 1/2 cup mayonaise
  • 1/2 tsp lemon
  • 1/4 tsp salt
  • 1/4 tsp pepper

Instructions

  • Preheat oven to 400 °F.
  • Add butter and a little bit of oil to a pan over medium heat.
  • Once the butter melts, add the garlic and mushrooms.
  • Season with salt, pepper and thyme and sauté for a few minutes until the mushroom is cooked.
  • Add the shredded taleggio and/or parmesan to the pizza crust, covering the surface.
  • Add the mushrooms next and spread it out then add mozzarella on top.
  • Bake for 10-15 minutes or until the pizza crust is golden brown and the cheese melts.

Roasted Garlic Sauce

  • Mash the roasted garlic in a bowl and add the mayonnaise.
  • Season with salt, pepper and lemon juice.
  • Mix well and serve with the pizza. Enjoy!

Notes

*You can use either taleggio or parmesan cheese for this or a combination of both. I find that either or both of the cheese is the perfect flavor for the base of this pizza.
*To roast the garlic, cut off 1/4-1/2 inch off the top of the whole head of garlic. Place on foil and drizzle oil all over. Wrap in the foil. Bake at 400°F for 35-45 minutes or until the garlic is brown and soft to touch.
*Drizzle some truffle oil or sprinkle chili flakes onto your pizza according to your preferences.
