Chicken Katsu Sandwich Sliders

  • 4 slider buns
  • 2 boneless chicken thighs
  • katsu sauce
  • panko crumbs
  • flour
  • 1 egg for egg wash

Creamy Cabbage Salad

  • 2 cups thinly sliced cabbage
  • 3 tbsp Japanese mayo
  • 1/4 tsp pepper
  • 1 tsp sugar
  • 1 tsp lemon juice


  • Slice the cabbage thinly. Mix all the other ingredients together in a bowl and add the cabbage. Mix until well combined. Set aside for later.
  • Season the chicken thighs on both sides with salt and pepper. Dredge the chicken thigh in flour, egg wash then panko crumbs.
  • Shallow fry over medium heat until golden brown or 4-5 minutes on each side. Place the chicken on a cooling rack for a few minutes to drain the oil. Optional step: sprinkle a bit of salt on the chicken while it's hot.
  • Place 2 slider buns on the chicken katsu and cut it to the shape of each slider buns. Save the extra chicken pieces to serve for later.
  • Spread katsu sauce on the inside of all your your slider buns.
  • To assemble, place the bottom half of the slider bun and add a piece of chicken katsu that's been cut. Spread a generous amount of katsu sauce on top and then the creamy cabbage salad. Lastly, add the top half of the slider bun.
  • Serve the extra chicken with the sliders and katsu sauce. Enjoy!


*I used chicken thigh for this but you can use chicken breast too. If using chicken breast, make sure to slice it in half and flatten it to equal thickness.
