This chili oil spam fried rice is my spin on the age old classic fried rice. It’s a spicy flavorful dish that’s incredibly easy to make! Ready within 15 minutes.

Easy Chili Oil Spam Fried Rice

Welcome back to my Recipes With Chili Oil Series! I can’t believe it’s already Day 4 after sharing my Homemade Chili Oil recipe. So it’s about high time I whip out my spin on the age old classic fried rice. And it’s a Quick Meal that only takes 15 minutes or less!

The best thing about fried rice is that it’s very forgiving. You can add anything you’d like while tailoring it to your taste. So adding chili oil is like my own personal cheat code, and I cannot get enough of it! This Chili Oil Spam Fried Rice is a spicy feel-good dish that’s pretty effortless to make and takes the stress out of any last-minute preparations.

We always have leftover/day-old cooked rice that’s enough for us to fry. But if you’re using freshly cooked rice, I would recommend to pop it in the freezer for about 30-60 minutes before frying. That’s because frying rice that’s freshly cooked can turn it quite mushy, and not end up with the best texture.

Chili Oil Spam Fried Rice

Simple but delicious fried rice. Ready in 15 minutes or less!

Ingredients
  

  • 2 cups rice
  • 1 green onion (diced)
  • 1/4 spam (diced)
  • 2 eggs
  • 3 tbsp chili oil
  • 3 tbsp salt
  • 1 pinch sugar

Instructions
 

  • In a pan, add 2 tbsp of only the oil of the chili oil and sauté the white part of the green onion and spam until the spam turns golden brown.
  • Push to one side and break the eggs into the pan and scramble. Once it's cooked, push to one side.
  • Add 3 tbsp of the chili oil and sauté for a minute. Add rice and season with a pinch of sugar. Mix well.
  • Garnish with green onion and enjoy!

Notes

*You can use any meat that you like, I happen to like using canned meat/spam for fried rice.
*I used my homemade chili oil.
*The amount of chili oil used should be up to preference.
*Taste for seasoning and adjust. It will depend on the chili oil you use. My chili oil is salty enough that I don’t need to add salt.

We got pizza from one of the oldest pizzerias in Naples, Italy and it didn’t disappoint. We got there right when it opened and there was already a line. We ended up getting the pizzas to-go and ate it on the hood of our rental car. Each box of pizza was only €5 and we got every item on the menu (it was only a 4 item menu anyway 😂). While waiting in line, the smell of the wood fired pizza was sooo good we were so hungry by the time we got our orders. We got pizzas from across the street too just to compare. There was no line at that restaurant and you could easily get a table. It was a little bit more expensive per pizza but still affordable. Both pizzas were delicious! Still dreaming about it till this day 🥲
Fun fact: Eat, Pray, Love was filmed at Pizzeria Da Michele!

Ending my Ramadan series with one of the best dishes. This is a dish that’s traditionally served during Eid/Raya in Malaysia, Indonesia and Singapore. Every family usually has their own version of this. It’s usually served with nasi impit (cubed rice), lemang or pulut kuning (turmeric glutinous rice) but also just as good with white rice. 
Making this is a truly a labor of love especially when you make big batches. It can take hours! Families will cook this the night before Eid so the dish will be ready in time for the big celebration. The whole house will usually smell like rendang when this is made and honestly, one of the best smells that reminds me of such great and fond memories. 
This month just flew by— thanks so much for tuning in. I’ll be back with my usual twice a week recipes starting next week 💛
