Chicken Katsu Sandwich Sliders

These crispy Chicken Katsu Sandwich Sliders makes for the perfect appetizer or filling snack. Fried breaded chicken cutlets, shredded cabbage salad and creamy katsu sauce stuffed between sweet bread rolls.

Chicken Katsu Sandwich Sliders

Chicken katsu and rice make a great pairing, as can be seen in dishes like Chicken Katsudon and Japanese Chicken Katsu Curry. But another popular way to enjoy chicken katsu is by turning it into a sandwich!

It’s known as ‘Katsu Sando’ in Japanese, whereby the term ‘Sando’ is just a short form of sandwich. Katsu can refer to both chicken katsu and pork cutlets, aka tonkatsu.

You can easily find these in convenience stores in Japan, and is one of those comfort foods that you can have on-the-go. So if you’re looking for some appetizers to make for a dinner party or game nights, this is definitely a great option!

Chicken Katsu Sliders

Chicken katsu is Japanese-style breaded chicken that’s fried until it gets deliciously crunchy on the outside, though still tender on the inside. We use panko crumbs when breading, which gives the cutlets that beautiful crispy texture.

In a typical Japanese sando, the type of bread they use is normally milk bread, called shokupan. Just like in this Japanese Egg Sandwich (Tamago Sando) recipe! However, for this recipe I’ll be using sweet bread rolls.

To assemble these sliders, chicken katsu is served between sweet bread rolls together with creamy shredded cabbage and katsu sauce.

Ingredients You’ll Need

  • Slider buns: I used King’s Hawaiian Original Hawaiian Sweet Rolls.
  • Boneless chicken thighs: I used chicken thigh for this but you can use chicken breast too. If using chicken breast, make sure to slice it in half and flatten it to equal thickness. 
  • Katsu sauce: I used Kikkoman Katsu Sauce.
  • Panko crumbs
  • Flour
  • Egg for egg wash

Creamy Cabbage Salad

  • Cabbage: Thinly sliced
  • Japanese mayo
  • Pepper
  • Sugar
  • Lemon juice

Instructions

  1. Slice the cabbage thinly. Mix all the other ingredients together in a bowl and add the cabbage. Mix until well combined. Set aside for later.
  2. Season the chicken thighs on both sides with salt and pepper. Dredge the chicken thigh in flour, egg wash then panko crumbs.
  3. Shallow fry over medium heat until golden brown or 4-5 minutes on each side. Place the chicken on a cooling rack for a few minutes to drain the oil. Optional step: sprinkle a bit of salt on the chicken while it’s hot.
  4. Place 2 slider buns on the chicken katsu and cut it to the shape of each slider buns. Save the extra chicken pieces to serve for later.
  5. Spread katsu sauce on the inside of all your your slider buns.
  6. To assemble, place the bottom half of the slider bun and add a piece of chicken katsu that’s been cut. Spread a generous amount of katsu sauce on top and then the creamy cabbage salad. Lastly, add the top half of the slider bun.
  7. Serve the extra chicken with the sliders and katsu sauce. Enjoy!

Notes for Chicken Katsu Sandwich Sliders

  • Don’t skimp on katsu sauce: Add on the katsu sauce to each layer of the sandwich to enjoy its flavor.

  • 4 slider buns
