Grinder Salad Sandwich Sliders. Baked sweet rolls spread with garlic butter, topped with cheese, your favorite cold cuts, and a delicious creamy grinder salad.

A hoagie that’s gone viral during recent months on TikTok is the grinder salad sandwich. And with each passing video of the sandwich that comes up while I’m scrolling, I salivate so much that it’s impossible to ignore. (Just like these other recipes: TikTok Salmon Rice Balls & Viral Grated Egg Avocado Toast with Chili Oil)

So I had to make my own version. But I turn it into sliders!

Grinder Salad Sandwich

The makings of the original sandwich starts off with a thick, crusty bread roll that’s smothered in garlic butter. Then you have a variety of deli meats, slices of cheese, and a creamy grinder salad that pulls everything together.

The term “grinder” that’s used as a substitute name for a hoagie is thought to originate from New England. And some think it’s because of the thick bread or the topping-packed sandwich that you have to “grind” through with each bite.

Now, since I switch my bread to sweet dinner rolls, there might not be as much crunch on the outside. But the cold cut meats and creamy salad that you pile on can definitely give you a run for your money.

Also, the thing about sandwiches is that you can easily modify it to your taste, or with what you have on hand. So if you’d like to add on some other veggies of your choice, such as carrots, or spice it up by adding a dash of chili flakes, then be my guest!

Ingredients

Main Ingredients

  • King’s Hawaiian sweet rolls
  • Cold cut meats/meats of choice: I used a combination of cold cut meats (beef pastrami, sliced turkey breast, roast beef slices) and turkey bacon.
  • 2 slices Muenster cheese or your choice of cheese

Garlic Butter

  • Unsalted butter softened
  • Minced garlic
  • Minced parsley
  • Salt

Creamy Grinder Salad

  • Small iceberg lettuce: Thinly sliced.
  • Red onion: Thinly sliced.
  • Japanese mayonaise: I am always for Japanese mayo, but you can also use regular mayo.
  • Pickled jalapenos + 1 tsp of the brine
  • Rice vinegar
  • Sugar
  • Grated parmesan
  • Basil
  • Oregano

Instructions

  1. Preheat the oven at 400 F. Add the sliced red onions in cold/ice water for at least 5 minutes to get rid of the strong spicy onion taste.
  2. Mix all the ingredients for the creamy grinder salad except for the onions and lettuce until well combined. Add the onions and lettuce and mix it. Keep it in the fridge for later.
  3. Mix all the ingredients together for the garlic butter.
  4. Cut the King’s Hawaiian sweet rolls in half to get 6 rolls. Slice it in half for the top and bottom halves of the sliders.
  5. Spread the garlic butter all over the inside of the rolls and bake for 5 minutes.
  6. Spread more garlic butter on the outside of the top half and place slices of cheese on the bottom half. Bake for another 5-6 minutes.
  7. Once baked, add your preferred meat combo and the grinder salad on top. Followed by the top half of the sweet rolls.
  8. For easy cutting, wrap with foil, cling film or parchment paper. Cut into smaller pieces for sliders. Enjoy!

Notes for Grinder Salad Sandwich Sliders

  • Meat options: For the meat, I used a combination of cold cut meats (beef pastrami, sliced turkey breast, roast beef slices) and turkey bacon. Feel free to use anything you want and as many as you desire. 
  • Prepare salad fresh: It’s best to make the salad right before you make the sandwich. Making it way ahead of time will result in a watery salad.

Ingredients
  

Main Ingredients

  • King's Hawaiian sweet rolls
  • cold cut meats/meats of choice
  • 2 slices Muenster cheese or your choice of cheese

Garlic Butter

  • 4 tbsp unsalted butter softened
  • 1.5 tbsp minced garlic
  • 2 tsp minced parsley
  • 1/4 tsp salt

Creamy Grinder Salad

  • 1/2 small iceberg lettuce thinly sliced
  • 1/4 red onion thinly sliced
  • 1/4 cup Japanese mayonaise
  • 1 tbsp pickled jalapenos + 1 tsp of the brine adjust amount according to preference
  • 1 tsp rice vinegar
  • 1 tsp sugar
  • 1/3 cup grated parmesan
  • 1/2 tsp basil
  • 1/2 tsp oregano

Instructions

Save and share this recipe! I am obsessed with this one. During restaurant week, Mike and I went to a place that served the most amazing bruschetta. So of course I had to recreate it at home but with my own twist.
I love roasted garlic so decided to add that instead of just rubbing fresh garlic cloves on top of toasted bread. I’ve also seen people add burrata and decided to try that and was instantly sold. Just don’t make the same mistake I did by forgetting to take out your burrata from the fridge ahead of time but I was chasing daylight so I had to make do 🥲 also, if you can’t find/don’t have burrata— just shred fresh mozzarella and mix it with heavy cream and a bit of salt to get stacciatella (the creamy inside of the burrata).
ANYWAY, I loved this so much I made it 3 days in a row 🥹 it’s a lot easier than it looks and I hope you like it!

I originally set out to recreate the Tom Yum Udon from FamilyMart back in Malaysia but didn’t have certain ingredients to complete the experience. I also felt like eating something creamy and so that led me to this particular recipe. I was going to use heavy cream but coconut milk made this even better (you can definitely use heavy cream instead if you’re not a fan of coconut flavored things). So maybe this udon is actually a mix between Tom Yum and Tom Khai Ghai which are two Thai soups that I absolutely love so I’d consider this recipe a winner ☺️
Tom Yum has a special place in my heart too because it’s definitely a must order for me and my family if we get Thai food. Safe to say, this udon recipe has been a repeat in my house the past few weeks and will definitely be part of our rotation this Ramadan 💛

Growing up, no matter how hot Malaysia is— we’ll always have soup at least once a week. Mostly a weekly request from my dad and something he looks forward to. So my mom will make different kinds of soups weekly. 
Now I associate soups as something comforting and the best pick me up. This is an easy and quick go to soup recipe for my house. It’s always a crowd pleaser too! Definitely making this more often during Ramadan ♥️
Although not traditional, I like seasoning with fish sauce because of the flavor it adds to the soup but feel free to skip and use soy sauce or salt instead.

This cookie dough baked oatmeal will be perfect for suhoor or as a healthy breakfast if you’re not fasting. I made this a lot the past few months for Mike’s breakfast and he loves it. I’m definitely planning to make this the night before and heat it up for our suhoor once Ramadan starts.
In the original viral recipe, she used a banana but I don’t like bananas. So I used medjool dates instead. More details on this on my site.

This fried chicken simmered in a savory and slightly sweet sauce is great on its own and so SO good with rice. It’s a family favorite especially among my nieces and nephews!
This dish is quite popular in neighboring countries too although it may be slightly different. There are so many variations of this dish with each family having their own take on it. This is a version of the dish that I’ve been making a lot over the years because of how easy and simple it is. 
Some recipes add potatoes to this dish too but I like keeping it simple.
For the sauce it’s sweet soy sauce, light soy sauce, oyster sauce, curry powder and rice vinegar. Full measurements with detailed instructions on my site!

One of the last meals my mom made for me before I flew back to Chicago was this fragrant coconut rice and rendang ayam. Rendang is basically a spicy dry coconut curry. Sometimes my mom uses beef but for this particular recipe, she used chicken. It can take hours to make especially if you use beef so that the meat is extra soft and tender. I like recreating recipes like this when I’m feeling homesick and to feel closer to my mom and family.
