Easy Pasta Recipe For Lunch Or Dinner

Here’s an easy pasta recipe that you can add to your arsenal for whenever you want to whip up a quick weeknight dinner, or whenever you’re feeling a bit lazy.

And the best part is that it’s a one pot meal! So there’s less things to clean up after the cooking.

One Pot Gochujang Pasta

The ingredient that’s the star of the show for this dish is gochujang. Gochujang is a Korean red pepper paste that’s spicy, sweet, and savory. It’s a condiment that’s used in a lot of Korean cooking, like marinades, stir-fry, and stews.

It pairs so well with tomato paste, which becomes the perfect base for our pasta dish. The sauce of this dish has a creamy consistency thanks to the addition of heavy cream, butter, and a combination of parmesan, mozzarella, and sharp cheddar.

Ingredients You’ll Need

  • Pasta: I used macaroni, but you can substitute with any pasta of your choice. Some other great pasta options that captures the sauce well are rigatoni, penne, and shell pasta. You can also go for pappardelle, fettuccine, spaghetti, or linguine.
  • Water
  • Sausages
  • Gochujang: Korean condiment of red pepper paste.
  • Tomato paste
  • Sugar: Sugar is used to help round out the flavors.
  • Garlic powder
  • Grated parmesan
  • Grated mozzarella
  • Grated sharp cheddar
  • Butter
  • Heavy cream: It helps to yield that thick and creamy consistency of the sauce. And its lower moisture content (as compared to milk) makes it easier for parmesan to melt.

how to make one pot gochujang pasta

  1. In a pot add pasta and water and bring to boil over high heat.
  2. Once the water starts boiling, turn down to medium or medium low heat and cook as long as the recommended time on the package instructions– stirring occasionally. If the pasta is still not cooked, add 1-3 more minutes. You want there to be some pasta water left but not too much (see notes).
  3. When there is 2 minutes left, add the sliced sausages and stir.
  4. Once the pasta is cooked, turn heat down to medium low and add the rest of the ingredients. Mix well until well combined. Taste for seasoning and adjust accordingly.
  5. Serve while hot with fresh/dried parsley and shredded parmesan on top. Enjoy!

How much water do I need?

Depends on the kind of pasta you use and your stove, the amount of water varies. Start with 1 extra cup of water to pasta ratio. So if you’re using 1 cup of pasta, add 2 cups of water. If the water completely evaporates while it’s cooking, add more water– 1/2-1 cup at a time. You still want some pasta water by the time you’re done cooking.

Can I adjust the amount of gochujang used?

Yes! Adjust the amount of gochujang to your preference. The more you add, the spicier it is. Adjust to taste with salt and sugar.

Can this recipe be vegetarian-friendly?

Yes, it can! Make this dish vegetarian by skipping the sausage or substituting with veggies.

Ingredients
  

  • 2 cups macaroni pasta or pasta of choice
  • 3 cups water see notes
  • 2 sliced sausages
  • 2.5 tbsp gochujang
  • 1 tbsp tomato paste
  • 1.5 tsp sugar
  • 1 tbsp garlic powder
  • 1/2 cup grated parmesan
  • 1/2 cup grated mozzarella
  • 1/2 cup grated sharp cheddar
  • 1 tbsp butter
  • 1/2 cup heavy cream
  • 1/2-1 tsp salt or to taste

Instructions

We got pizza from one of the oldest pizzerias in Naples, Italy and it didn’t disappoint. We got there right when it opened and there was already a line. We ended up getting the pizzas to-go and ate it on the hood of our rental car. Each box of pizza was only €5 and we got every item on the menu (it was only a 4 item menu anyway 😂). While waiting in line, the smell of the wood fired pizza was sooo good we were so hungry by the time we got our orders. We got pizzas from across the street too just to compare. There was no line at that restaurant and you could easily get a table. It was a little bit more expensive per pizza but still affordable. Both pizzas were delicious! Still dreaming about it till this day 🥲
Fun fact: Eat, Pray, Love was filmed at Pizzeria Da Michele!

Ending my Ramadan series with one of the best dishes. This is a dish that’s traditionally served during Eid/Raya in Malaysia, Indonesia and Singapore. Every family usually has their own version of this. It’s usually served with nasi impit (cubed rice), lemang or pulut kuning (turmeric glutinous rice) but also just as good with white rice. 
Making this is a truly a labor of love especially when you make big batches. It can take hours! Families will cook this the night before Eid so the dish will be ready in time for the big celebration. The whole house will usually smell like rendang when this is made and honestly, one of the best smells that reminds me of such great and fond memories. 
This month just flew by— thanks so much for tuning in. I’ll be back with my usual twice a week recipes starting next week 💛
