Kerabu Maggi is an instant noodle salad that’s been increasing with popularity in Malaysia, and is becoming more common in restaurants across the country. It’s an adaptation of the famous Thai instant noodle salad street food called Yum Mama.

In Thailand, their most famous instant noodle is “Mama”, which is the brand mostly used for their street food. Hence, the name Yum Mama (with Yum referring to the spicy, sour and sweet sauce). Likewise, Malaysians consume that much Maggi to the point that it’s become almost synonymous with instant noodles.

Kerabu Maggi Recipe

With the starting base of the recipe being instant noodles, you already know that this dish is going to be good. Add on some key ingredients to the mix, such as fish sauce, shallots, chili, lime juice, and cilantro, then you’ll understand why the kerabu Maggi holds an explosion of flavors.

It’s also a feast for the eyes because of the colorful veggies incorporated. And the best part is that this delicious meal can be put together within just 15 minutes!

Ingredients

  • Instant noodle of your choice: Maggi is typically used, with a preference for the Tom Yam flavor.
  • Shallot
  • Carrot
  • Lettuce
  • Tomato

Sauce

  • Instant noodle seasoning packet
  • Lime juice
  • Fish sauce: An important addition for a dash of saltiness and umami.
  • Sugar: Sugar is used to round out the flavors and meld everything together.
  • Water
  • Cilantro
  • Chili pepper (optional): Malaysians love our spice, so chili peppers are a must. However, you can opt out if you’re not a fan of it.

Instructions

  1. Mix all the ingredients for the sauce and set aside. Soak shallots in cold water for a few minutes to get rid of the spiciness and drain from water.
  2. Prepare all the vegetables for the dish and cook instant noodles per package instructions and drain the water. Rinse noodle under running water for a few seconds.
  3. Add all the ingredients to a bowl and pour the sauce. Toss until well combined and enjoy!

  • Adjust the amount of seasoning used to taste.

Ingredients
  

  • 1 packet instant noodle of your choice Maggi is typically used
  • 1/2 shallot sliced
  • 1/2 carrot julienned
  • 1 cup shredded lettuce
  • 1/2 tomato cubed

Sauce

  • 1/2 instant noodle seasoning packet
  • 1 tbsp lime juice
  • 2 tsp fish sauce
  • 1.5 tbsp sugar
  • 1/2 cup water
  • 2 tbsp cilantro minced
  • 1 chili pepper sliced – optional

  • Mix all the ingredients for the sauce and set aside. Soak shallots in cold water for a few minutes to get rid of the spiciness and drain from water.

We got pizza from one of the oldest pizzerias in Naples, Italy and it didn’t disappoint. We got there right when it opened and there was already a line. We ended up getting the pizzas to-go and ate it on the hood of our rental car. Each box of pizza was only €5 and we got every item on the menu (it was only a 4 item menu anyway 😂). While waiting in line, the smell of the wood fired pizza was sooo good we were so hungry by the time we got our orders. We got pizzas from across the street too just to compare. There was no line at that restaurant and you could easily get a table. It was a little bit more expensive per pizza but still affordable. Both pizzas were delicious! Still dreaming about it till this day 🥲
Fun fact: Eat, Pray, Love was filmed at Pizzeria Da Michele!

Ending my Ramadan series with one of the best dishes. This is a dish that’s traditionally served during Eid/Raya in Malaysia, Indonesia and Singapore. Every family usually has their own version of this. It’s usually served with nasi impit (cubed rice), lemang or pulut kuning (turmeric glutinous rice) but also just as good with white rice. 
Making this is a truly a labor of love especially when you make big batches. It can take hours! Families will cook this the night before Eid so the dish will be ready in time for the big celebration. The whole house will usually smell like rendang when this is made and honestly, one of the best smells that reminds me of such great and fond memories. 
This month just flew by— thanks so much for tuning in. I’ll be back with my usual twice a week recipes starting next week 💛
