Quick & Easy Noodle Soup
As the temperatures continue to drop during this winter season, and the Chicago winds lends that frosty bite, all I keep craving for is soupy meals. Even if I’ve been indoors all day.
One of the things that I’m always up for is to experiment for quick and easy noodle soup recipes. For instance, a couple months ago I shared this savory Easy 15-minute Homemade Instant Ramen dish. And many of you loved the 10-minute Spicy Gochujang Noodle Soup and 15-minute Garlic Miso Noodle Soup.

Thai Mama Noodle Soup Copycat
For this dish, I was inspired by Thailand’s popular instant noodle brand named Mama, and their famous tom yum flavor. So while testing out recipes, I tried to make a homemade version of Mama’s Tom Yum noodles from ingredients in my pantry and it worked!
This recipe is so simple, the broth requires just 5 ingredients: hot water, coconut milk, fish sauce, tom yum paste, and sugar. I often have leftover cooked noodles, so it only takes me 5 minutes to put everything together. (Yes, you read that right. 5 minutes!)
However, if you’re boiling your noodles fresh when making this dish, then add on a few more minutes to the total time. But that will still give you a bowl of easy tom yum noodle soup that’s cozy, hearty and comforting within just 10 minutes!
