It feels like we were just ringing in the new year yesterday, but here we are at the beginning of February already! And for those who watch American football, that means there’s a big game day coming up that you’ll be tuning into.

For a classic game day food selection, you can never go wrong with the delicious queso dip. So cheesy, rich, and flavorful, everyone will keep reaching for it without fail. If you’re hosting a game day party with family and friends, this recipe is perfect as it can be doubled easily!

Velveeta Queso Dip with Ground Beef

Queso is a popular Tex-Mex cheese dip that’s incredibly addicting. A basic homemade recipe would normally require some sort of processed American cheese (because that’s the best way to get that smooth and cheesy texture) and a can of spicy diced tomatoes.

With this recipe, we’re adding in some seasoned ground beef for a fuller bite and extra depth of flavor. And instead of using canned tomatoes (read: Ro-tel), I’m using a fresh tomato but will add in some sliced jalapenos for that spicy kick.

Ingredients You’ll Need

Ground Beef

  • Ground beef
  • Cumin
  • Garlic powder
  • Onion powder
  • Oregano
  • Sugar
  • Paprika
  • Chili powder
  • Light soy sauce

Queso Dip

  • Velveeta cheese: Use 16 oz if you don’t want a thick queso dip
  • Any flavor Boursin cheese or cream cheese
  • Onion diced
  • Garlic
  • Tomato
  • Jalapeno (optional)
  • Cumin
  • Paprika
  • Oregano
  • Sugar
  • Lime juice

Other Ingredients

  • Tortilla chips
  • Cilantro (for garnishing)

Instructions

  1. Preheat oven to 375 F.
  2. In a cast iron skillet/oven safe pan, add ground beef. Break up any clumps and cook over medium heat.
  3. Once it’s halfway cooked, add all the seasonings except for the light soy sauce and sugar. Stir and once it’s cooked, add the light soy sauce and sugar. Stir until well combined and let it cook for another 1-2 minutes then turn off heat.
  4. To the same skillet/pan, add everything else except the lime juice. Place the skillet/pan into the oven and let it cook for 30-35 minutes.
  5. Stir until everything is well combined and add lime juice. Garnish with whatever you want. Serve with tortilla chips. Enjoy!

Notes for Ground Beef Queso Dip

  • Instead of salt, I like to use light soy sauce for that extra depth of flavor. You can skip and use salt, adjust to taste. 
  • I reserved about 1/4-1/2 cup of the cooked ground beef to garnish on top with pickled jalapeno and cilantro. This is optional but makes the dish look even more presentable.
  • If you don’t have a cast iron skillet/oven safe pan, cook the beef in any normal pan and transfer to an oven safe baking dish before adding the rest of the ingredients.
  • If the queso dip is too thick to your liking, I like to add 1/2 cup of milk immediately once it’s done cooking. Please note, only do this if you are using a cast iron skillet/oven safe pan because adding liquid to glass/breakable dish when it’s hot can cause it to break.

Ingredients
  

Ground Beef

  • 1 lb ground beef
  • 2 tbsp cumin
  • 1.5 tbsp garlic powder
  • 1.5 tbsp onion powder
  • 1 tbsp oregano
  • 1 tsp sugar
  • 1.5 tbsp paprika
  • 1 tbsp chili powder
  • 3 tbsp light soy sauce see notes

Queso Dip

  • 16-32 oz Velveeta cheese use 16 oz if you don't want a thick queso dip
  • 5.2 oz any flavor Boursin cheese or cream cheese
  • 1 onion diced
  • 1 tbsp minced garlic
  • 1 tomato diced
  • 1 jalapeno diced, optional
  • 1 tbsp cumin
  • 1 tbsp paprika
  • 1 tbsp oregano
  • 1 tsp sugar
  • 1 tbsp lime juice

Save and share this recipe! I am obsessed with this one. During restaurant week, Mike and I went to a place that served the most amazing bruschetta. So of course I had to recreate it at home but with my own twist.
I love roasted garlic so decided to add that instead of just rubbing fresh garlic cloves on top of toasted bread. I’ve also seen people add burrata and decided to try that and was instantly sold. Just don’t make the same mistake I did by forgetting to take out your burrata from the fridge ahead of time but I was chasing daylight so I had to make do 🥲 also, if you can’t find/don’t have burrata— just shred fresh mozzarella and mix it with heavy cream and a bit of salt to get stacciatella (the creamy inside of the burrata).
ANYWAY, I loved this so much I made it 3 days in a row 🥹 it’s a lot easier than it looks and I hope you like it!

I originally set out to recreate the Tom Yum Udon from FamilyMart back in Malaysia but didn’t have certain ingredients to complete the experience. I also felt like eating something creamy and so that led me to this particular recipe. I was going to use heavy cream but coconut milk made this even better (you can definitely use heavy cream instead if you’re not a fan of coconut flavored things). So maybe this udon is actually a mix between Tom Yum and Tom Khai Ghai which are two Thai soups that I absolutely love so I’d consider this recipe a winner ☺️
Tom Yum has a special place in my heart too because it’s definitely a must order for me and my family if we get Thai food. Safe to say, this udon recipe has been a repeat in my house the past few weeks and will definitely be part of our rotation this Ramadan 💛

Growing up, no matter how hot Malaysia is— we’ll always have soup at least once a week. Mostly a weekly request from my dad and something he looks forward to. So my mom will make different kinds of soups weekly. 
Now I associate soups as something comforting and the best pick me up. This is an easy and quick go to soup recipe for my house. It’s always a crowd pleaser too! Definitely making this more often during Ramadan ♥️
Although not traditional, I like seasoning with fish sauce because of the flavor it adds to the soup but feel free to skip and use soy sauce or salt instead.

This cookie dough baked oatmeal will be perfect for suhoor or as a healthy breakfast if you’re not fasting. I made this a lot the past few months for Mike’s breakfast and he loves it. I’m definitely planning to make this the night before and heat it up for our suhoor once Ramadan starts.
In the original viral recipe, she used a banana but I don’t like bananas. So I used medjool dates instead. More details on this on my site.

This fried chicken simmered in a savory and slightly sweet sauce is great on its own and so SO good with rice. It’s a family favorite especially among my nieces and nephews!
This dish is quite popular in neighboring countries too although it may be slightly different. There are so many variations of this dish with each family having their own take on it. This is a version of the dish that I’ve been making a lot over the years because of how easy and simple it is. 
Some recipes add potatoes to this dish too but I like keeping it simple.
For the sauce it’s sweet soy sauce, light soy sauce, oyster sauce, curry powder and rice vinegar. Full measurements with detailed instructions on my site!

One of the last meals my mom made for me before I flew back to Chicago was this fragrant coconut rice and rendang ayam. Rendang is basically a spicy dry coconut curry. Sometimes my mom uses beef but for this particular recipe, she used chicken. It can take hours to make especially if you use beef so that the meat is extra soft and tender. I like recreating recipes like this when I’m feeling homesick and to feel closer to my mom and family.
